Arroz Con Dulce [yumm]

Arroz con Dulce
(Sweet rice pudding, Puerto Rican style) 

Ingredients:
(serves 4)
4 cups water
1 teaspoonful salt
1 teaspoonful cloves
1 tablespoonful crushed fresh ginger
1 14-oz can coconut cream such as Coco Lopez
1 cup regular, uncooked, short-grain rice
1 cup sugar
1 tablespoonful cooking oil (optional)
1/2 cup raisins

Procedure:
For best results, soak rice in water for about two hours prior to cooking. Drain.
Add the salt, cloves and ginger to three cups of water in a deep sauce pan. Bring to a boil. Sieve through a colander to remove the remnants of the spices.
Bring to a boil once again. Add the coconut cream, rice, sugar and oil. Cook covered over medium-low heat for about twenty minutes. Add the raisins and blend in. Continue to cook, uncovered, until the rice has absorbed all the water (about fifteen more minutes).
Cooking times vary depending on your climate and elevation from sea level. 
Don't worry: this recipe is very forgiving of cooking lapses. Just don't overcook!
Pour into a square or rectangular dish about one inch high and allow to cool. Sprinkle ground cinnamon or cinnamon sugar on the pudding and cut in two-inch squares for your diners.
It is equally enjoyable after refrigeration. It will keep for several days, well covered in the refrigerator.

Pina Colada

Pina Colada
4oz. coconut cream
8oz. Puerto Rican white rum [or none is optional]
12 oz. unsweetend pineapple juice
3 cups of ice [or more as youre desire]
Blend in all together until thick and creamy.
Put it in the refregirator until serving.
serve it in any type of cup [as you desire]
& if you wanna add a little touch to it put a cherry on it... Enjoy!
 


Limber de Coco

Limber de Coco

1 Can of coconut milk
1 Can of coconut cream
1 Can with hot water [use one of the empty can of coconut milk or cream]
1/4 teaspoon of [cinnamon]

Mix them then put in a plastic cup & to the freezer the go...
When their finish [you got youre limber the coco!!]

Limber de Leche [my favorite]

Limber De leche Recipe!

Ingredient 1:
1 large can of evaporated milk
1/2 cup of sugar [regular sugar]
1 teaspoon of vanilla
A little bit of cinnamon [put it youre taste]

Ingredient 2:
1 egg yog
2 teaspoon of sugar

Procedure:
Mix Ingredient 1 & 2 seperatly....
Then after mixing put them together in a plastic cup.
& wala to the freezer they go!!
When froozen you have a limber the leche =)
